Newari Cuisine in Nepal

Newari Cuisine is a type of Nepalese cuisine that has developed over centuries among the Newar community of Kathmandu valley in Nepal. Newari cuisine is the most popular food variety here in Nepal that consists of more than 200 dishes. Newari Cuisines are the one of the oldest and historical dishes which have its own value and importance. Food is one of the most important parts of Newari culture. Newar people prepare different varieties of food indifferent occasions, considering the climate and nutritional needs for body. Cuisines served in Newari culture during feasts and festivals have symbolic significance.

Here are some of the Newari Cuisines which is popular all over Nepal:

1.     Yomori.

Yomori is the Newari cuisine popular all over Nepal. This food is made up of rice flour with different type of filling the common one is malicious (chalu). This is made in the winter season the day called yomori Purnima. It is believed that the days became longer from this day and the it has one of the longest night of the year. Newari community wordship yomori as the first food made with the new grain.

2.      Chatamari.

Chatamari is also a Newari cuisine made with rice flour. This dish is used for many occasions like Guthi, Dewali and many other occasion. This dish is served with meat its soup and meat and with various type of vegetables. This dish is cooked over pan with thin layer of  rice flour. It is one of the healthy dish.

3.      Ju Ju Dhau

Ju Ju Dhau is the Newari yogurt it is the sweet dish of Newari culture. This dish is made with well boiled milk with sugar. This Cuisine is served at the end of the meal which helps to digest the food. It has very important role in Newari cuisine. This dish is used in every Newari occasions and festivals.

4.      Sapu micha

Sapu Micha is a Newari dish which is made with the bone marrow inside the thin stomach. This provide heat to the body. It gives you best feeling while eating the bone marrow liquid brust inside your mouth which gives you best experience. It is one of the popular dish in Newari community.

5.      Kachila.

Kachila is the raw meat which grind in small pices is marinated with lots of spices. It is serves with bitten rice and the meat soup. This dish is popular all over Nepal. It can be found in every Newari restaurants. This dish has a different flavor other than ordinary non vague dish dishes. This dish is prepared with soft meat of buffalo of goat body. This dish is served with Aila hard drink of Newari culture.

6.      Choila.

Choila is prepared with the meat of buffalo, goat, chicken and duck. This is spicy dish served with hard drinks of newar called thoo and aila. There are 2 type of choila they are mana choila and haku choila, mana choila is the choila prepared with boiled meat of animal and haku choila is choila prepared with the meat rosted in hay.

7.      Woo

Woo is the Newari cuisine which is also called bara in Nepali. This dish is serves with the meat soup. Woo is popular all over the Nepal. It is made up of paste of grain over the pan with veg and non veg options. Woo is the Cuisine which provide you energy and protein. This is healthy dish of newar community.

8.      Kwati.

Kwati is the veg dish of the Newari community. Basically this the sopup made up on 12 different kind of grains. This is prepared in summer season which gives you energy and protein for your daily life. This clears your stomach and improve your digestion.

9.      Alu Chhon.

Alu chhon is the Newari dish made up of potato and the bamboo. Basically, this is bamboo soup which has sour flavor and taste of spices in this. This soup is mostly prepared while the taste of mouth is mot good. It gives you strong flavour of Chhon which is served with the bitten rice and nonveg item. 

 

10.  Takha

Takha is the seasonal dish which is made in winter seasons like November, December, and January. This dish is made up of the buffalo meat which is boiled for hours with different type of masalas and let it to be set over night. This dish is served with bitten rice and many other veg and nonveg items. It is the Nonveg jelly texture meat.
